If I'm not mistaken, those are Volks dolls.
They make several "lines" of dolls, but the ones most familiar to otaku seem to be the Dollfie/Super Dollfie series.
The video from YouTube you provided is of the Sephiroth Super Dollfie.

The dolls are relatively expensive (They can run $500+ for a custom model), but they are all made with loving care, and become like daughters/sons with time...
Many items are only available through a lottery system, so you're not always guaranteed to be able to purchase the dolls you would like, but it does make it all the more special if you are able to win that chance to purchase the doll!
Someday I'll make an investment in these...
