Lemons have an even wider use in cooking than simply taste

Lemons are mostly grown in tropical and subtropical regions of the world such as Mediterranean countries, South America and southern areas of the United States.  Lemons have been used historically for medicinal purposes and most notably for fighting scurvy on ships in the British Royal Navy.  Early history references to lemons and lemon trees are found throughout the world in art work and legal documents.    

Lemons are the most widely used and cliché abused citrus fruits of all time.  People value lemons for their practical culinary and housekeeping uses and their similarities to the human character.

Most people associate the smell and taste of lemons with freshly cleaned surroundings or freshly prepared food.  We add lemon scent to our dish detergents and household cleaning supplies.  For a touch of freshness in our homemade dishes we add a bit of lemon zest or lemon juice.

Many people enjoy the taste of lemons.  Lemon meringue pie, lemon drops and other candy, lemon-lime soda, lemon cake, lemonade and many more lemon food and drink are available for those that crave them.

Lemons have an even wider use in cooking than simply taste.  People add lemon juice to freshly cut apples and bananas to keep them from browning.  A little lemon juice with seafood is also helpful to reduce the fishy taste of all things that come from the sea.  The acidity of lemon juice helps break down collagen fibers in meat and is often used as a meat tenderizer.  A little lemon in hot tea can reduce the symptoms of throat and head congestion.  Also, lemons contain Vitamin C, which is valued for the boost it gives to the human immune system. 

Lemons are also a widely used metaphor for anything beautiful and bright on the outside and sour on the inside.  If someone purchases a great looking car that eventually shows a lot of problems, then this person has purchased a “Lemon”.  When people live successfully under difficult circumstances, they are “Making lemons into lemonade”.  An old folk song reminds us that, just like a lemon tree with beautiful blossoms and sour fruit, humans have the potential to be untamable and unattainable, even though their appearance makes them most desirable.

Can you make a key lime pie and substitue the lime for lemon?

I made a key lime pie for thanksgiving, and it was so easy. I love lemon and I want to know if you can make key lime pie, but instead of usuing lime, use lemon.

Sure, why not. Use the grated rind of the lemon as well to enhance the flavour. I also have used half of each using both grated rinds. Really nice.
