i'm not sure if i understood your question fully -- i'm assuming you mean if the sketch needs to be the same scale each time you draw it. if it's just a sketch, it's not necessary to have the same scale every time you put pencil to paper. for instance, just because an image is drawn larger doesn't mean the actual item will be sized larger. it might just mean that it's zoomed in for a closer look at the item. and the model should not be posed the same way in every sketch, since you'd like to see an outfit three dimentionally, to fully view all the details. i don't think you shoud worry about what other fashion designers have in their portfolios, but rather focus on what you are designing. ultimately, that's what people will be looking at.
