Making a red velvet cake without the red food coloring?

I always make a red velvet cake but I thought about changing it up slightly by not putting in the red food coloring. It would taste the same, right? What color would it turn out to be? Brown? White? Yellowish?

as far as i know, red velvet cake is essentially chocolate cake with red coloring. i don't know what color it would turn out if you made it from scratch though. maybe i'm wrong?
